Going to a bbq at a friend’s house tomorrow night, and, as usual, i try to bring some homemade treats for dessert. this time, i made vegan and gluten-free alfajores (caramel sandwich cookies)!
i pre-made the raw, dairy-free, and refined sugar-free dulce de leche a few nights ago so that i’d have it ready for today; plus, @unconventionalbaker said it’d get even better if you let it sit for a few days. i personally can’t tell if it made a difference taste- and texture-wise, but it sure made things less stressful today since i could just bust the caramel out of the fridge and drop a dollop onto the cookies. 😁
i’m not gonna lie though. the caramel doesn’t actually taste like caramel. it tastes more like a light chocolate pudding - a super yummy one. the main ingredient is medjool dates, but it doesn’t taste datey. you’d probably be surprised what else is in there: agave, coconut butter, cashew butter, vanilla, lemon juice, carob powder, blackstrap molasses, and salt! if anyone wants some to put in their coffee, over their ice cream, on toast, etc, let me know! i have tons left.
regarding the actual cookies, there’s no vegan butter - just coconut oil! 👍🏻 they have a nice hard-yet-soft texture - know what i mean? 😆 for the sugar dusting on top, i couldn’t find powdered coconut milk, but the confectioners sugar i have is vegan. so, i used that instead!

Happy saturday! recently i have been working on filled cookies - it takes me back to my obsession with kingston biscuits when i was a child. today’s treat is peanut butter cookies sandwiched together with raspberry cream cheese filling. super decadent but worth the calories! #peanutbutter#cookie#yum#thebakingcollective
If you don’t own a cookie scoop, go out and get one now! seriously one of the simplest but best baking tools ever. after using cookie scoops for a while now, and always getting perfectly round and same size cookies, i can’t believe i ever made cookies without one!! they are especially helpful when making sandwich cookies, like these super cute and vibrant cookies i made for easter last year! they were a huge hit with the kids 🤗
