padella_pasta We were in abruzzo a while ago and hosted by our dear friends @emidiopepe (some of the finest wines in italy) and @cgblewis (one of the finest drinkers in the world) and they introduced us to the wine and food of their beautiful region - it totally rocks! one of the stand outs was ventricina which is a soft cured pork salumi with chilli, orange zest, fennel seed, nutmeg and black pepper - holy moly it’s good! the only comparison is nduja but it’s more course, has a subtle chilli kick and more of a complex flavour profile. we brought some back to padella and it turns out it’s insanely delicious wrapped around papardelle! if you’re coming to see us, you gotta give it a try!
