We were in abruzzo a while ago and hosted by our dear friends @emidiopepe (some of the finest wines in italy) and @cgblewis (one of the finest drinkers in the world) and they introduced us to the wine and food of their beautiful region - it totally rocks!
one of the stand outs was ventricina which is a soft cured pork salumi with chilli, orange zest, fennel seed, nutmeg and black pepper - holy moly it’s good! the only comparison is nduja but it’s more course, has a subtle chilli kick and more of a complex flavour profile.
we brought some back to padella and it turns out it’s insanely delicious wrapped around papardelle!

We’re looking for a manager to come on board and run our bakery and creative lab in borough market. you’ll be responsible for the day to day requirements which involve the production of baking bread and pastries, a bit of office time and making fresh pasta. you’ll work with timmy (one of the owners) on his creative adventure to expand padella’s baking range and new pasta ideas.
